As far as I know, you need a food buff to do the parkour the intended way (of, well, doing the parkour), and use that to help with climbing the tree. Several of the snow blocks on the tree are solid.

you do not need a food buff for the parkour
however you do need very good timing
you can do the parkour from the very start without buying anything on any class or using any abilities

I figured out that you can get the food buff (I usually dont buy potions until late game though) but it seems pretty impossible without buffs, I just hiti my head on the two top platforms.

Yet again, you dont need the speed buff or food for it to be possible, but it makes it easier
