Why is there a > instead of a / in the second option?

for the latter, it partly seems simpler, and partly more complicated

maybe -

/item John 1 red dye with menacing
or
/give John 1 red dye with menacing-
or
/spawn John 1 red dye with menacing

/spawn can be confused with /spawn as an equivalent to magic mirror.

No significance, mainly to differentiate

I wonder if people type out stuff like:
/i warding worm scarf

I don’t think it’s uncommon, I also thought that was the syntax before learning the correct syntax

But there are problems when entering /i lucky coin.
Will it give lucky coin item or will it just say some items that start with “coin”?

there is nothing in the game simply called ‘coin’, fortunately. That might work for the newer players who (from personal experience… oops) think the modifier is part of the weapon or accessory.

but other weapons are affected by it

try /i "legendary" meowmere (add the sarcasm symbols to show that its a modifier)-
